UTB Lunch Week: Koja's Vegetarian Tofu Noodles

You have to wait in line in the cold for at least five minutes to get even the smallest order at Koja (38th and Walnut), but it's always worth it. While I could get just about anything on the menu and be happy, I was craving some vegetarian food today– and their tofu noodles don't disappoint. Many other Asian food trucks on campus serve grub that is 99% salt and 1% chicken-mushy vegetables-noodles-unidentifiable filler, but not Koja. The sauce isn't too salty and the noodles and tofu are very filling and flavorful. Overall, a wonderful lunch. But be warned if you order it spicy: it's painfully hot (in a good way). Go get Koja. Now.
